One of the easiest things I love to make is Moules marinière (with my own twist).
- Simply chop lots of garlic, chilli, ginger, spring onions and red onions. The amount depends on how much you want yourself, although I tend to use 1 onion, half a red chilli, a good chunk of ginger and 4 cloves of garlic (I love garlic).
- Add a good sprinkle of olive oil (or 4-5 teaspoons) to a hot pan and toss in the spices. Then you simply fry the mixture for a minute or two.
- Toss in the mussels (Obviously you need to put the mussels in water and discard any ones that are broken).
- On with the lid for a few minutes on full heat, then add a good splash of white wine.
- Mix it all together, add chopped parsley and put the lid back on for a few minutes.
- Add a splash of cream at the very end and voila! The best breakfast/lunch/dinner!
